Peppermint Simple Syrup for Peppermint Mochas
I am a big fan of peppermint white mochas. In fact, once the cool weather comes around, that’s pretty much the only espresso drink I want. They just seem so festive, and I can’t resist the peppermint and white chocolate combination. Since we have an espresso maker at home, it seems silly to always run out to a coffee shop whenever the craving hits. Since not much was going on here Sunday, I decided to make peppermint simple syrup so that I can have peppermint white mochas whenever I want. This is both a good and very bad thing.
Simple syrup is just that – simple. Once you know how to make it, you can pretty much make any flavor you want. I love making things on a whim, and this was definitely one of those things. Eric and I were enjoying peppermint white mochas shortly after I decided to make the syrup. Gotta love that! You only need three ingredients – sugar, water and peppermint extract. I started with a 1/2 teaspoon of extract, which wasn’t strong enough, so I increased it to 1 teaspoon. I also added some candy cane pieces to give it that pretty pink color, but that’s certainly not necessary.
I was unsure about storage and looked up how to store simple syrup. From what I’ve read, it seems best to refrigerate syrup made with a 1:1 ratio of sugar to water (apparently more sugar gives it a more stable shelf life, so 2:1 simple syrup could be stored in the pantry). I’ve read it can be kept from one month to up to six months, but I don’t think you’ll have any problem using it in a month’s time. At the rate I’m using it, I’ll probably be making more next week. If espresso drinks aren’t your thing, I think this would be great in a martini or mixed with club soda, too.
1 cup water
1 cup sugar
1 teaspoon pure peppermint extract
½ teaspoon candy cane pieces (for color), optional
- 1
In a small saucepan, bring sugar and water to a boil. Reduce heat to medium and stir constantly until sugar is dissolved.
Stir in the peppermint extract and candy cane pieces, if using. Cool to room temperature and store in a glass bottle in the refrigerator.
- 2
To make the peppermint (white) mocha, combine one shot of espresso with 2 tablespoons peppermint syrup, 1 tablespoon chocolate or white chocolate sauce and desired amount of milk. Top with whipped cream and candy cane pieces, if desired.
Courtney, you are soooo talented!! Beautiful! Please make us some when you come home, of course we don’t have an espresso!
Thanks for the sweet comment, but this is one of the easiest things in the world to make. We’ll have to give it a try when I’m there for Christmas.
I never go to Starbucks, but I heard about this drink and thought it sounded so good. I’ll have to try the homemade version instead!
It is quite good, but highly addictive! 😉 Eric prefers the chocolate version, but the white chocolate is definitely my favorite.
what a great idea to make your own! do you think you could sub splenda for sugar?
I think so. I would try an equal ratio of Splenda to water, then taste and adjust as needed before adding the extract. Let me know if you try it because I’d love to hear how it turns out.
mmmm I was just thinking this morning that I need to drink a peppermint white mocha before Christmas is over and they’re gone. Maybe I’ll try making my own….
I’m ashamed to say I’ve already had my fair share of them. At least I can make them at home the rest of the month. I hope you’re able to enjoy one soon either way!
Wow how creative! This looks beautiful and absolutely delicious. I wasn’t craving a peppermint white mocha… until now!
Thank you so much! I really appreciate that!
I love Peppermint mochas, but my wallet can’t buy them too often. I have used the Coffeemate creamer version, but I love this more natural homemade syrup. I will be trying this soon. Thanks!
I know what you mean! It’s much more economical to make them at home. I hope you like it if you get the chance to try it.
Yummmy and so easy to whip together.
Yum! I bet this would taste amazing in hot chocolate too.
I didn’t even think about that. Thanks for the idea!
I love the top photo!
This is great! I think I’ll make a lot of different
flavors! I’m excited! Love the blog! so cute and helpful!
i am sooooo excited to make this.i’ve had this at starbucks and it was realllllllllllyyyyyyyy goooooooddd. i just hope i make it well. but i have to make it the day before I have it? YUMMMMMMYYYYYYYYYYYY
No, you can make it the same day. I hope you enjoy it. It’s one of my favorites!

When you are making a latte…can you tell me what is your ratio of a simple syrup, to espresso shots, to milk?
I find when I make myself an espresso, by the time I mix the simple syrup, the steamed milk, and the espresso it isn’t hot enough?
Any suggestions?
It depends, but most of the time I use 1 tablespoon per shot of espresso. Sometimes I use 2. Our espresso machine steams and froths the milk and gets it pretty hot, so I’m no help there. Sorry!
I started buying $13 bottles of Peppermint Flavoured Syrup (1 liter) at Starbucks to “save money” so to now have your recipe is great. Thank you.
Vanilla bean lemonade is absolutely my favorite lemonade, hands down. I love the little kick of sweetness mixed in with the tarty lemon. So fresh!
This lemonade sounds delicious! Now I want a tall, frosty glass and an afternoon in which to sit around and sip it slowly. 🙂
What a wonderful version of lemonade. This is my favorite summer drink—-well next to margaritas. Ha!
Warm weather definitely calls for fun drinks to encourage hydration! This sounds totally lovely. I’m not sure when my mom is planning on having my bridal shower, but I’m thinking this needs to be an add-on to the menu!
Being pregnant I’m sick of water. I got sick of lemonade with my first, but now I’m totally craving it because if this. I can’t wait to make this!!!
Look around for a restaurant supply place that sells food (mostly frozen) to both restaurant and public. We have a Cash and Carry, and can buy for less than $5!
I love this in just my water, so refreshing
